My name is David Nieves Palma, and Sabor & Fuego Latin Fusion is more than a restaurant to me — it’s a dream that started in my family’s kitchen back in Peru. Food has always been the way we celebrated, connected, and showed love. Those flavors, those memories, and that fire stayed with me my whole life.
After more than 24 years working in the restaurant industry, I knew it was time to bring something different to Tampa — something real, something cultural, something with corazón. That’s how Sabor & Fuego was born.
Family Is at the Heart of Everything
I didn’t build this alone. My brother, JP Nieves Palma, has been a huge part of this journey. His support, ideas, and belief in what we’re creating helped push this dream forward. Together, we wanted to bring a piece of our Peruvian roots to the Tampa community — not just through food, but through the warmth and hospitality we grew up with.
Why We Cook
Every dish on our menu carries a story — from the Lomo Saltado I grew up watching my family prepare, to the Ceviche Mixto inspired by the coastal flavors of Peru, to the sauces and marinades we make from scratch every day.

Our restaurant at 1001 N MacDill Ave is cozy and intimate — and that’s exactly how we want it. When you walk in, I want you to feel like you’re stepping into a warm, welcoming corner of Peru. The music, the décor, the energy… it all comes from the heart.
